Meet Karen Schatz
I’m so thrilled to be co-creating my first blog. What a journey I’ve been on (as you will soon discover)! Seventeen years ago, healthy foods and healthy lifestyles were brought into my awareness but I admit, leading up to that point, I never gave it a thought. I struggled with weight gain all my life but I didn’t engage in a healthy lifestyle until I was in my late 20’s. After the birth of my son, I thought the pounds would drop off along with the “baby weight” … okay, NOT!
When I was 38, I joined Weight Watchers and successfully lost 45 pounds! For the first time in my life, I truly felt at my optimum best. I sustained my svelte figure until a couple of years ago. (You can read about what caused me to gain nearly 60 pounds back in my article entitled, Get Me Off This Merry-Go-Round!) What I want to share with you is that through all the yo-yoing of pounds, I continued on my journey to live my life well — spiritually, emotionally and physically.
Today, I am a successful business owner of Virtually With You Virtual Assistance and WellnessGardens.com. As a VA, I specialize in helping busy people by providing personal and professional administrative support “virtually” from my home office. I help my clients obtain or regain stress-free and balanced lifestyles as I take care of the projects that are draining them. This allows them the time and opportunity to do what they love to do. I especially love working with coaches and authors.
While working with Sandee Strunk as her VA, we discovered that we have the same values around living healthy. So, we joined forces and together we are offering WellnessGardens to you. This site is a plethora of alternative therapeutic products and services.

As a child in my grandfather’s vegetable garden, my grandfather said, “… feed the soil and it will feed you!” Granddad was commenting on getting the best out of my garden by making sure the soil – the place where all the luscious edibles would gain their nutritive power – was fed with minerals and nutrients that would feed my fruits and vegetables which would later feed me. Simply said, the healthier the produce, the healthier I would be.
That was the beginning of learning about a healthier lifestyle. But I went to college and got a bit off-track with late nights, soda pop and pizza. Later, while still in my twenties, my husband and children and I moved to Hawaii where I learned even more about diet, exercise and a healthy lifestyle. There we had the luxury and freshness of state-grown produce and most of it was “naturally organic” since the islands have not been as contaminated as other states have been; primarily because the local people have carefully stood watch over their precious land.
After ten years in Hawaii, we moved back to the mainland to live up in the Pacific Northwest where environmentalists have helped to do a good job in keeping down the destruction that industry can cause. However, this only began after the locals discovered that their beautiful land was being destroyed by nuclear plants, excessive construction, and a lack of regulations. So here I learned about Organic Gardening, and a way to live and sustain our land and our lives.
It was also here I opened a private practice in counseling as a therapist. I noticed that many people struggled often because of lack of poor diet, exercise and proper supplementation. Over the last 50 years, the nutrients in our foods have decreased and is why fresh produce, dairy and meats are not able to give us all the vitamins, minerals and nutrition we need. And is why, we need to properly supplement with high quality products that are not found in grocery or drug stores. I noticed as clients changed their unhealthy habits – both nutritionally and relationally – for new ones, their emotional and mental health began to improve substantially.
My quest for answers for myself and those I served came in a number of ways. After WellnessGardens.com was born back in the 1980’s, I became a Certified Leadership Coach. Part of what I did then as well as now is to coach others to success in their businesses, non-profit work and lives using every advantage possible; and along with Karen and our staff, we coach for health in terms of nutritional product coaching.
Today, WellnessGardens.com has expanded from mere coaching and offering supplements to our official web site, where we offer various forms of products to enhance your life and the lives of your family, including our pets.
